Smokey’s Cheesy Smashed Cauliflower

Smokey’s Cheesy Smashed Cauliflower


Two of our favorite meals are pasta and rice.  We’ve discovered that smashed cauliflower with cheese can be used as a substitute for both of these.  Our recipe has only a handful of ingredients and merely takes about 10 minutes to create.
The ingredients include:
1 Cauliflower Head
1 Cup of Chicken Broth
1/2 Stick of Butter or Margarine
1/4 Cup of Parmesan Cheese
2 Cups of Shredded Cheese of choice
Olive Oil
Pepper (to taste)
I usually begin by cutting off the leaves and discarding the core of the Cauliflower Head.  I then continue to cut the head into small sized florets and place them in a pot.  Cutting them into smaller sized florets will allow them to steam faster.
As I was preparing the cauliflower, I noticed that I didn’t have Chicken Broth. However, I poured 1 Cup of water into the pot and then sprinkled 1 tsp. of Chicken Bouillon Powder over the cauliflower. That worked just fine and didn’t take away from the flavor.
I then, generously drizzled Olive Oil over the top of the cauliflower, placed a lid on the pot, and cooked on the stove on high heat for 8-10 minutes, depending on the size of the head.
After 8-10 minutes, the water should have evaporated and the cauliflower should have thoroughly steamed.  Now, you’re ready to smash your cauliflower until the mixture looks similar to rice.
Should you notice that your cauliflower has cooked sooner than planned, not to worry.  A slight browning of the underside of the cauliflower still allows for a delicious dish, and may appear as “brown” rice.
While the mixture is still hot, it’s time to add the butter, Parmesan and Shredded Cheese.  Stir the mixture until the butter and cheeses have melted and then sprinkle with pepper to your liking.
There you have it!  A side dish of Smashed Cauliflower that can be used as a pasta and rice substitution.  We enjoy pouring Chili, Curry, or Tomato Sauce over our Smashed Cauliflower mixture to make for a scrumptious meal or to use for a side dish accompaniment.
We estimate that the carb count for our dish is approximately 25 grams and lasts us for about 2 meals.
