Giraffe’s Mighty Meatloaf
Here’s a recipe for a scrumptious and satisfying Meatloaf! We’ve been substituting bread crumbs with Parmesan Cheese to give our dish a cheesy and zesty flavor, while allowing us to cut down on the carbs.
Our ingredients include:
3-4 lb. Ground Beef
½ Large Onion
2 4oz. Cans of sliced mushrooms
4 Roma Tomatoes
1 tsp. Garlic Powder
1 tsp. Italian Seasoning
1 tsp. Pepper
1 tsp. Paprika
1 Tbsp. Worcestershire Sauce
2 Tbsp. Chili Powder
½ Cup of Mayonnaise
½ Bottle of Heinz Tomato Ketchup Reduced Sugar
1 Cup Parmesan Cheese
Large package of Shredded Cheese of Choice
We begin by placing 3-4 pounds of Ground Beef into a large mixing bowl. From there, we add the eggs and vegetables.
My mom bought us this awesome “1 Second Slicer” that slices almost any vegetable, literally in a second. This invention is amazing and saves much time. We therefore, use this slicer to chop our onions.
We’ve tried using this slicer for our tomatoes. However, we ended up spraying our tomatoes all over our surrounding walls and floors. Since we don’t have a food processor, smashing our tomatoes in a Ziplock Bag and then adding them to our mixing bowl, seems to work fine.
We usually add more than 1/2 of the bottle of Ketchup to our mixture, since we enjoy our meatloaf extra moist. Don’t worry about adding too much ketchup, as the longer the meatloaf sits, after it’s been cooked, the more it solidifies.
Next, we’ll stir the mixture until the contents are well blended and then pour into a greased 8 by 13 inch baking pan. Be certain to press the mixture evenly into the pan.
Bake at 350F degrees for 45 minutes to 1 hour or until the meat is fully cooked and the middle is not pink. After the meatloaf seems fully cooked, we’ll drain the grease into an empty container and then slice the meatloaf in half, just to make certain that the middle is done.
We’ll then pour our bag of cheese generously over the meatloaf, until covered. Finally, return the meatloaf to the oven for an additional 5 minutes, or until the cheese has fully melted and/or the cheese has browned.
And there you have it! This hearty meal lasts us for at least two nights and also makes great leftovers.
