Giraffe’s Marvelous Low-Carb Macaroons
We thoroughly enjoy our hearty meals. However, we equally love our desserts. We were looking for something sweet to eat, but without the attached carbs. Our lovely, chewy low-carb macaroons then came to mind. If you like coconut, you’ll adore our macaroons.
This recipe only takes about 5 minutes of preparation time, while cooking takes an additional 12-18 minutes
You’ll need only a few ingredients for this scrumptious recipe:
- 5 Medium Eggs
- 1 Cup of Sweetener
- 1 Tsp. Vanilla
- 2 Cups of Unsweetened Shredded Coconut
- 2 Tbsp. Water
- 1 Sheet of Parchment Paper (not pictured in the above photo)
We’ll begin by separating our egg whites from our yolks and will place our egg whites into our mixing bowl.
To separate the egg whites, gently crack and break the egg evenly in half.
Hold each half of the egg in each hand. Gently transfer the egg yolk back and forth into the empty half of the egg shell, allowing the egg whites to stream into the mixing bowl. Continue transferring until most of the egg whites have fallen into the bowl and then discard the remaining yolk. Continue with the remaining eggs, until finished.
We’ll then add our vanilla, sweetener, water, and coconut to our egg whites and will stir until completely mixed together.
Next, we’ll place our mixture aside for about 5 minutes, allowing our “batter” to thicken,
In the meantime, we’ll spray our baking pan with cooking spray, line the pan with a sheet of parchment paper, and will once again spray the paper with cooking spray. This will guarantee that our macaroons will not stick to our pan.
We’ll then preheat our oven to 325F degrees.
We will next scoop about 1 Tbsp. of “batter” into the palm of our hands and will roll into a tiny ball. Next, we’ll place the coconut ball on the parchment paper and will slightly flatten. Continue flattening until all balls are slightly flattened.
It’s then time to place our Macaroons in our oven and bake them for 12-18 minutes or until slightly browned. We like to check the bottom of our Macaroons every 5 minutes to make certain they are not burning.
If your Macaroons are browning too quickly on their bottoms and not so much on top, it’s okay to lower the temperature in 25F degree increments and continue cooking until done.
Allow your Macaroons to cool for 5-10 minutes and they are ready to serve!!
