Smokey’s Low-Carb Chocolate Coconut Mascarpone Nuggets
Sometimes, all we need to satisfy a sugar craving, is a decadent nugget of richness.
We really enjoy creating low-carb desserts, using cream cheese. However, we discovered that Mascarpone Cheese has zero grams of carbs and still offers creaminess and flavor.
Our chocolate coated coconut Mascarpone nuggets are simply decadent and yummy, and remind us of a chocolate truffle.
Our recipe is no-bake, with a preparation time of 5-10 minutes. An additional chilling in the refrigerator requires 1 to 2 hours.
Our ingredients include:
(The inside of the nugget)
- 8 oz. Mascarpone Cheese
- 1 Cup of Unsweetened Coconut Flakes
- 1/2 Cup Sweetener
(The outside coating)
- 1 1/2 Sticks of Butter or Margarine
- 1/3 Cup Heavy Whipping Cream
- 1/3 Cup Unsweetened Cocoa Powder
- 3/4 Cup of Sweetener
We’ll begin making the inside of the nugget by placing our cheese into our mixing bowl.
We’ll then add our Coconut, Sweetener and will stir until well blended.
Next, we’ll grab just enough of the mixture to roll into a 2 inch ball, which we will place on a sheet of wax or parchment paper.
Our recipe makes approximately 14 balls.
We’ll then, slip our paper onto a baking pan and will place in our refrigerator for about 1 hour.
This will give our cheese time to further solidify, assisting us with our next step.
While our nuggets are resting in our refrigerator, we’ll make our pudding like coating.
We’ll add our Heavy Whipping Cream and butter into our mixing bowl.
We’ll then soften our butter, by placing our bowl into the microwave for 30 seconds.
This will allow us to easily blend our butter with our cream.
After we briefly stir, we’ll then whisk our mixture, ensuring our ingredients are fully blended.
Next, we’ll add our Cocoa and Sweetener and will stir.
I had to mention that our coating tastes JUST like a buttery chocolate pudding. 😀😀😀
We’ll now remove our cheese nuggets from the refrigerator and will roll each in the coating.
We’ll drop a couple of nuggets, at a time, into our mixture and will remove when each is completely coated.
Next, we’ll place each nugget back onto the wax paper, until all are coated.
We’ll then, place our chocolate nuggets back into the refrigerator for another 30 minutes to 1 hour to allow our desserts to fully solidify.
Our nuggets are now ready to partake!!
Wow! These nuggets are scrumptious,yet creamy and decadent.
After devouring only 2 nuggets, our sweet tooths were definitely satisfied. That leaves us almost a week supply of nugget richness.
