Giraffe’s Mini Low-Carb Cake-in-the-Cup

 How many times after dinner, have you been watching television, when suddenly you begin to crave something sweet.  You don’t want to bake a cake or perform some time-consuming project. Instead, you wish something was instantly available for you to eat.

Well, now there is…Giraffe’s Mini Low-Carb Cake-in-the-Cup takes less than 2 minutes to bake…in the microwave oven!

Believe it or not, our cake is chocolatey, fluffy, moist, and semi sweet.

The best part is that our cooking time is 1 minute 20 seconds, while preparation time is less than 10 minutes.

The ingredients we used were:

  • 1 Cup + 1 Tbsp. Heavy Whipping Cream
  • 4 Tbsp. + 2 Tbsp. Sweetener
  • 2 Tbsp. Cocoa
  • 1 Egg
  • 1 tsp. + 1/2 tsp. Vanilla
  • 1/4 tsp. Baking Powder
  • Pinch of Salt

We’ll begin by beating our egg in our bowl and will set aside.

We’ll then, mix our Cocoa, 4 Tbsp. of Sweetener, and salt together.

Next, we’ll add 1 Tbsp. of Heavy Whipping Cream,  1/2 tsp. of Vanilla, and egg to our dry ingredients and will mix until well blended.

We’ll then, add our Baking Powder and will also stir until well blended.

Now, we’ll spray our ramekin (or mug) with cooking spray, will pour our batter, and will bake in the microwave for 1 minute and 20 seconds.

After our batter has baked, we’ll remove our cake from our microwave and will flip on a plate to cool for about 10 minutes.

While our cake is cooling, we’ll prepare our homemade whipped cream.

This recipe is VERY simple and only takes 3-5 minutes to make, with an electric hand mixer.

If you’re using a little muscle power and a whisk, the preparation time might take a little longer.

We’ll now pour 1 Cup of Heavy Whipping Cream, 2 heaping Tbsp. of Sweetener, and 1 tsp. of Vanilla into our bowl and will blend on high-speed with our electric hand mixer until our cream is thick.

Our whipping time was a mere 3 minutes.


We’ll then, spoon a dollop of our whipped cream on our mini cake and…


We’ve taken 15 minutes out of our busy nightly schedule to create a scrumptious, moist, and yummy low-carb chocolate cake!

Who knew something so delicious would take a little time to bake.  😅
