Smokey’s Low-Carb Berry-licious Blueberry Blintz Souffle
These yummy blueberry blintz souffles taste like upgraded blueberry crepes.
We love the flavor of rich ricotta cheese mixed together with a sweet element and then baked to perfection.
Our blintz souffle is very simple to make and doesn’t take much time.
Our preparation time is 5-10 minutes, while our baking time is another 25.
We visited our local grocery store to buy our ingredients:
- 3 Tbsp. Sugar-Free Maple Syrup
- 1 Cup of Ricotta Cheese
- 1 Egg
- 1 tsp. Lemon Juice
- 1/2 Cup + 1/2 Cup + 1/2 Cup of Blueberries + 10 Blueberries (1 1/2 Cups + 10)
- 1/4 Cup of Carbquik
We’ll begin by adding our Ricotta Cheese, egg, syrup, lemon juice, and Carbquik to our mixing bowl and will mix until well blended.
Next, we’ll add 1/2 Cup of our blueberries to our mixture and will slightly stir, so we do not break or smash them.
We’ll then, spray 2 ramekins with cooking spray and will preheat our oven to 400F degrees.
In order to enhance our blueberry flavors, we’ll add 1/2 cup of blueberries to each ramekin.
Next, we’ll evenly add our batter to each of our ramekins, filling them almost all the way to the top.
We’ll then decorate the top of our souffles with 5 blueberries each and will place in our oven for 25 minutes, or until slightly browned and blueberries have slightly bubbled.
We’ll now remove our souffles from our oven and will allow to cool for about 5-10 minutes.
The aroma of our blueberry blintz souffles are slowly permeating our apartment and are softly tantalizing our nasal passages.
Our warm, sweet, and creamy souffles are out of this world!!
They are rich and creamy with a sweet blueberry flavor in each bite.
Our blintz souffles throw me back to a time, when we first met each other and visited a deli in Detroit, known for their huge and tasty blintz.
